New Recipe {AND} A Couple New First!

I am officially doing the happy dance that it's Wednesday and we only have two more days until us and our fur babies will be in Austin!!!

The past two weeks I decided for our meals I would only cook out of one of my "healthy" cookbooks.
 
This past Christmas Chase and Alyssa got us this yummy easy as low fat  pie cookbook
 
 
This is such a good cookbook for 2 people and even has 1 person recipes!
 
Last night I made the yummy
 
 
 
~ recipe ~
 
Preheat your broiler (first time using one ever last night - it went directly to 500 degrees, so I am assuming that is the temp) Line a small baking sheet with nonstick aluminum foil and lightly mist the foil with Olive Oil spray.
 
Place both pork chops on the baking sheet and lightly mist both sides with your Olive Oil Spray. Season both sides with garlic powder, salt and pepper.
 
Place pork chop in oven for 8 minutes then flip to the other side and cook for another 8 minutes. Once the pork chop is almost done spread 1 tablespoon of apple butter on the top side of both pork chops. (using/buying apple butter was also a first, it is pretty tasty!)
 
Cook for an additional 4 minutes, until apple butter is a dark brown and ENJOY!
 
To quote Z on these pork chops..."These are freaking amazing!"
 
I am going to assume he liked them.....
 
and to make it even better, these bad boys are only 164 CALORIES per serving!

Have you tried any new "healthy" recipes lately?? Does anyone else find it harder to cook healthy or do I just look at pinterest too much during the day?

    We are finally doing better cooking healthier. We're doing low-carb dinners, so bye-bye to pastas and breads which is SO SAD, but it shows quickly! ;)

  3. Some healthy recipes are harder but, you can still make "healthy" recipes & they be just as good as any un-healthy recipe. I use skinnytaste.com A LOT! Her meatloaf cupcakes & mashed potatoes are to die for!
