Ingredients
- 1 Cup white rice, long grain (uncooked)
Salt to taste
1/2 C Shredded Mozzarella, part skim
1 C Canned Italian Tomatoes
2 Boneless Chicken breasts, sliced down the middle and pounded to 1/2"
Black Pepper to taste
4 thin slices prosciutto
Basil
1 Lemon
Directions
1. Pre-heat oven to 450 degrees. Cook rice according to package instructions.
2. Pound chicken breasts halves to 1/2" thickness.
3. Stuff chicken with mozzarella, tomatoes & basil to taste, roll and place seam side down on pizza stone or casserole dish (sprayed with Pam).
4. Bake 14-16 minutes or until chicken is no longer pink.
5. Zest entire lemon into rice and add 2 Tablespoons of basil. Mix well.
