Recipes of the Week

Since I love cooking and like to think of myself as Paula Deen Jr., I would like to share with you the two new receipes I made this week! Both were very good and took no time to make! I didn't take pictures of the two dishes but I will make sure I do for furture post! Enjoy!

Bow Tie Fiesta
Ingredients:
8 ounces bow tie pasta (I used 16oz)
1 pound ground beef
½ onion, chopped
½ green bell pepper, chopped
1 (15-ounce) can tomato sauce
1 tablespoon chili powder
Salt to taste
1 cup sour cream
1 cup salsa
½ cup sliced black olives
¼ cup sliced jalapenos (optional)
1 tomato, chopped
1 cup shredded Cheddar cheese
Directions:
Cook the pasta using package directions and cooking for 7 minutes; drain. Brown the beef in a skillet, stirring until crumbly; drain. Add the onion and green pepper and mix well. Cook until the onion is tender, stirring constantly. Stir in the tomato sauce, chili powder, and salt.  Combine the pasta, ground beef mixture, sour cream, salsa, black olives, jalapenos, and tomato in a bowl and mix well. Spoon into a 9×11-inch or 9×9-inch baking dish. Sprinkle with the cheese. Bake at 350 degrees for 20 to 30 minutes or until brown and bubbly. Yield: 8 servings
***I used ground turkey meat instead of hamburger meat and I used Medium Salsa. It made it spicey for those who like hot stuff. I think next time I may add half of a package of cream cheese, just because it makes every recipe that much better!***

Bacon-Wrapped Pork Tenderloin
Ingredients:
1 (1-lb.) pork tenderloin
1 teaspoon steak seasoning
4 slices of bacon
directions:
1. Preheat oven to 425. Remove siler skin from port tenderloin, leaving a thin layer of fat covering the pork. Sprinkle seasoning over pork. Wrap portk with bacon slices and secure with wooden picks. Place pork on a lightly greased wire rack in an aluminum foil-lined roasting pan.
2. Bake at 425 for 25 minutes or until meat thermometer inserted into thickest portion registers 155. Increase oven temperatore to broil. Broil 5 inches from heat 3 to 5 minutes or until bacon is crisp. Remove from oven; cover pork with foil, and let stand 10 minutes or until thermometer registers 160. Makes 4 servings.
***I do not have a wire rack so I just put the tenderloin in a baking dish. Also I do not have a meat thermometer so I just cooked it according to the minutes in the recipe.****

I got both of these recipes from Blue Eyed Brides blog. Zachary really liked both of them, however I will make sure the next time I make Bow Tie Fiesta its not so hot.
